Chicken and Red Sauce (Ketogenic, Gluten Free)
Most of my clients enjoy recipes with the fewest ingredients to make cooking more realistic, and I don't blame them! This one is perfectly simple, but tastes like it took hours!
Makes: 4 Servings
INGREDIENTS
- 4 Bone in, skin on chicken breasts (pasture raised, organic)
- 1 15 oz can organic tomato sauce (ideally only ingredient being tomatoes)
- 1 Tbsp Olive Oil
- 2 yellow onions, sliced
- 1 Tbsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- sea salt + pepper to taste
DIRECTIONS
- Heat a cast iron skillet on medium-high with 1/2 of the olive oil
- Season the chicken breast on both sides with salt and pepper
- Once the pan is hot, sear the chicken until brown, about 4-5 minutes each side
- Add the sliced onions with the rest of the olive oil
- In a medium bowl, whisk all seasonings into the tomato sauce.
- After the onions have begun to brown, add the seasoned sauce to the pan and incorporate with onions and chicken
- Cover the pan and cook on low for about 40 minutes or until the chicken is cooked through.
- Serve over cauliflower mashed potatoes with roasted broccolini (pictured here) or other veggie for a low carb comfort food meal!
